D-Tagatose Is a Promising Sweetener to Control Glycaemia: A New Functional Food

چکیده
The objective of the current research was to review and update evidence on the dietary effect of the consumption of tagatose in type 2 diabetes, as well as to elucidate the current approach that exists on its production and biotechnological utility in functional food for diabetics. Articles published before July 1, 2017, were included in the databases PubMed, EBSCO, Google Scholar, and Scielo, including the terms "Tagatose", "Sweeteners", "Diabetes Mellitus type 2", "Sweeteners", "D-Tag". D-Tagatose (D-tag) is an isomer of fructose which is approximately 90% sweeter than sucrose. Preliminary studies in animals and preclinical studies showed that D-tag decreased glucose levels, which generated great interest in the scientific community. Recent studies indicate that tagatose has low glycemic index, a potent hypoglycemic effect, and eventually could be associated with important benefits for the treatment of obesity. The authors concluded that D-tag is promising as a sweetener without major adverse effects observed in these clinical studies.

The acute effect of D-tagatose on food intake in human subjects.
A double-blind randomized crossover study was performed with nineteen normal-weight men to investigate the effect on subsequent ad libitum food intake of replacing 29 g sucrose with 29 g D-tagatose as sweetener to a breakfast meal. D-Tagatose is a malabsorbed stereoisomer of fructose with potential application as a bulk sweetener. Food intake was measured at lunch offered 4 h after the breakfas...
متن کاملTagatose and milk allergy.
Tagatose is a new food ingredient being used as a reduced-calorie sweetener in foods and beverages. Tagatose is a six-carbon ketose sugar found naturally in some dairy products and in tropical date trees. As tagatose is incompletely absorbed, it provides only 1.5 cal/g as contrary to 4 cal/g for sucrose. Tagatose has approximately the same sweetness as sucrose. Recently, a manufacturing process...

Effects of functional sweeteners on the development of the metabolic syndrome and atherosclerosis are unknown. The objective was to compare the effect of dietary carbohydrate in the form of sucrose (SUCR) to D-tagatose (TAG; an isomer of fructose currently used as a low-calorie sweetener) on body weight, blood cholesterol concentrations, hyperglycemia, and atherosclerosis in low-density lipopro...
متن کاملProduction of a New Drink by Using Date Syrup and Milk
Date Syrup is a natural sweetener that is a suitable ingredient to be used in formulation of food products in order to improve the nutrient properties. In this research a new drink is produced by the addition of date syrup in concentration of 5%, 8%, and 10% to milk. Physical, chemical, rheological and sensory properties of the samples were evaluated. Statistical analysis using SPSS software an...

A new isomerization reaction was developed to synthesize rare ketoses. D-tagatose, D-xylulose, and D-ribulose were obtained in the maximum yields of 24%, 38%, and 40%, respectively, from the corresponding aldoses, D-galactose, D-xylose, and D-ribose, by treating the aldoses with 80% (v/v) subcritical aqueous ethanol at 180°C. The maximum productivity of D-tagatose was ca. 80 g/(Lh). Increasing ...
